. So, this obviously is the same lady as last photo. I secretly captured this photo when she was baking bread and did not notice me. The totally awesome thing… After asking, she told us that she was baking bread for the whole village and with an completely authentic (and almost automated) workflow.
This kind of bread is baked in layers. While one of the breads is baking, the second one is cooling down. In the meanwhile she is putting a new layer on the third bread.
When the bread that’s now baking is ready, it’s the new layered bread’s turn and she will make a new layer on top of the bread that’s currently cooling down. Beautiful thing to see, authentic Macedonian baking at it’s best. . . . . .
